Winning Recipe: ​

Creamy Cheesy Chicken Chili

Ingredients:

  • 2 cans black beans (rinsed)
  • 2 chicken breasts (cooked, chopped--- I like to fry them so they are browned)
  • 2 cups half-and-half
  • 1 cup Velveeta (cubed)
  • 1 cup pepper jack cheese (cubed)
  • 1 can diced tomatoes, (drained well)
  • ½ cup green onions (diced)
  • 1 tsp cumin
  • 1 tsp cayenne pepper
  • 1 tsp chili powder
  • ¼ cup chopped pimento (drained)

Directions:  Warm half and half (can use microwave it to get a quick start). Add cheeses.  After cheeses are melted, add everything else. Warm through.
