Goat Cheese Chicken
Ingredients
Yields 8 servings
- 8 chicken thighs (with skin)
- 8 oz goat cheese (log shape)
- 8 large basil leaves
- bag of fingerling potatoes
- olive oil
- pepper
- salt
Directions
- Pre-heat oven to 375 degrees
- Rinse chicken thighs, loosen skin, place on roasting sheet
- Cut goat cheese into 8 1-ounce pieces, place each piece under the skin of one chicken thigh, gently press skin to spread goat cheese underneath
- Place one basil leaf under chicken thigh skin on top of goat cheese, so have 8 thighs, each with goat cheese and basil leaf under skin
- Drizzle a little olive oil over each piece of chicken, sprinkle a little pepper and salt on each piece
- Cut fingerling potatoes in half, place pieces around chicken thighs on roasting sheet
- Cook 40-45 minutes, until chicken golden on top
- Plate one thigh per person
- When all chicken removed from roasting sheet, mix potatoes with remaining melted goat cheese
- Place a scoop of potatoes on each plate
- Serve!
