Red Cabbage with Lime
Ingredients
- 1 head of red cabbage
- 1/4 cup good olive oil
- Juice & zest of 1 lime
- Sugar- about 1 tbsp, depending on taste
- Coarse salt, fresh ground pepper, according to taste
Directions
- Pull off the soft outer leaves of the cabbage.
- Stand it on its stem and cut it in half.
- Core out the thick fibrous stem.
- Slice the cabbage into fine shreds.
- Add olive oil, lime juice, lime zest. Mix with your hands.
- Taste.
- Add sugar, salt, pepper to your liking.
