Ingredients

  • 2 lbs roast beef, rare and sliced
  • 1 sweet red onion, sliced very thin
  • 3/4 cup olive oil
  • 1/2 cup red wine vinegar
  • 2 tsp dijon mustard
  • 2 tsp salt
  • 1/4 tsp pepper
  • 1/2 cup  hopped parsley
  • 2 avocados, peeled and sliced
  • French baguette

Directions

  • Arrange in a 9x13 pan layers of beef, onion, beef, onion.
  • Mix olive oil, red wine vinegar, dijon, salt, pepper & parsley. Pour over the top. Marinate several hours or overnight.
  • Add avocado just before serving.
  • Serve with crusty French bread to sop up marinade.
  • Enjoy!
