British Gingerbread

Description of the dish: A spongey and cakey gingerbread that is delicious with a cup of tea as a snacking cake in the afternoon.

Time to prep: 20 minutes

Time to cook: 1 hour

Ingredients:

  • 8 oz Flour
  • 1 tsp baking soda
  • 4 tsp ground ginger
  • 2 tbs treacle (use molasses)
  • 2 tbs golden syrup (can use maple syrup)
  • 1/2 cup milk
  • 4 oz of margarine
  • 1 egg

Cooking Instructions:

  1. Sieve flour and ginger
  2. Melt sugar, treacle, syrup, milk and margarine in a pan
  3. Let cool a little then add baking soda
  4. Pour in flour and ginger and mix well
  5. Finally add well beaten egg
  6. Pour into a square cake pan (8” x 8” silicon is great or greased metal)
  7. Bake for about 1 hour at 325-350F
