Appetizers and Side Dishes

The secret to Fried Rice is to cook the plain rice the day before and let it cool in the refrigerator overnight. Use any vegetables and meat you have on hand. The joy of this recipe is that it is flexible.

Traditional German-style potato salad. May be served hot or cold - both are equally good.

My mother never added nuts or raisins. Her bread was smooth and moist.

This recipe is a new take on the classic bruschetta. The roasted veggies and goat cheese combine for an explosion of flavor.

Entrees

Baked chicken in a cream sauce with swiss cheese.

This recipe has two parts - the chili sauce and then the Chile Colorado that is made with the sauce. No tomatoes or tomato sauce in this recipe. Only chilies. It's very versatile and can be made with pork or beef or a combination. Serve it over rice, beans, or in a tortilla with guacamole and cheese.

A scrumptious chili that will really warm you up! The secret to making it so tasty is the browned tomato paste. You can use any type of lager or ale that you want, I just prefer Avery's because it doesn't overpower the other flavors in the dish.

This flavorful and filling vegetarian lentil and rice dish is the perfect meal for a fall night. The spices will leave you going back for seconds!

These Instant Pot Quinoa Burrito Bowls are an easy and healthy make-ahead meal loaded with fiber and protein. This recipe is a great make-ahead meal to prepare over the weekend, You can enjoy it right away when it’s warm, then have lunch ready-to-go for three more days next week.

This is a super yummy lasagna recipe and it isn't hard to make. Also, it is easily adjustable for specific likes or needs. This is also great to prep the night before a gathering and just put into the oven when guests are arriving.

This breakfast strata is a great, easy egg dish for any breakfast or brunch gathering. The green chilies and spicy cheese give it a little kick, but not overpowering spice. The prep needs to be completed the night before to give the egg mixture time to soak into the English muffins, so plan accordingly.

A taste of the Mediterranean - Sicilian meat rolls grilled on a skewers. May be served as an appetizer or as part of the main meal.

Sweet potatoes and black beans is an awesome combo. The core of the dish is the sweet potatoes, spinach, black beans and spices and so if you are vegan, or have other dietary restrictions, and want to leave off the feta and egg, it's still quite tasty.

Desserts and Other

A spongey and cakey gingerbread that is delicious with a cup of tea as a snacking cake in the afternoon.

A sweet/tart dessert perfect any holiday.

If you've baked gluten-free or vegan (or both!) cakes before, you know how easy it can be to come out with a finished product that is dense and chewy, or dry and crumbly. This rich, dark chocolate cake will impress your friends and family - and it's so moist and fluffy they won't know it's gluten-free AND vegan unless you tell them!

This British dessert consists of a very moist sponge cake, covered in a toffee sauce. The sponge can be made and frozen, ready to 'bring out' for surprise dinner party guests. The sauce takes only a couple of minutes to make and can be poured over your sponge portion whenever.

These dog biscuits are super easy to make and use healthy ingredients. You can use carrots instead of sweet potatoes depending on your pup's preference. As good as these look, remember that these are for dogs.
